Almond Flour Cookies

Let’s be honest Cookies are a top favorite piece of dessert which everyone loves. No dessert comes in more flavors, texture,size and shapes and yet they are the simplest to make. As easy as they are to make, cookies are not as healthy as they seem to be. We often want a small treat to please our craving but want to eat healthy at the same time. This gluten-free, low carb almond flour healthy cookies are the right delicious treat that helped me with my carvings without feeling guilty.

Ingredients

-1 egg

-1 teaspoon vanilla extract

-1/4 melted coconut oil

-2 1/2 teaspoons stevia

-1 1/4 cup almond flour

-1/2 teaspoon baking soda

-Chopped pieces of chocolate

-Parchment paper or PAM

Note:
You can substitute the stevia for coconut sugar or date sugar based on preference. Be sure to include chocolate with low sugar, dark chocolate or cacao nibs. Mix the chopped pieces of chocolate at own preference. If you use PAM for the cookies not to stick, olive oil PAM has less fat.

Prepare Ingredients

To be able to mix all ingredients in a bowl it is better if all ingredients are prepared to mix.

-Preheat oven to 350 degrees F.

-Place the coconut oil in a glass container and melt in microwave.

-Measure all the ingredients listed in ingredients.

1.In a large bowl, add in the egg, melted and cooled coconut oil, stevia and vanilla extract.

2. Next add the Almond Flour and the baking soda.

3. Mix all ingredients except the chocolate till the flour becomes moist and you cant see the separation between the ingredients. (Use your washed hands to mix if needed.)

4. At this point the dough must be moist. (Don't worry if it is a yellowish color with the mix if the almond flour and egg the texture and color of the dough can be strange.)

5.Use a cookie scoop or you hands to make small balls of dough.

6.Grab as many small parts of the chopped chocolate and place it in the middle of the ball.

7.Place your parchment paper in the trey and start placing your small balls of cookies. Be sure to leave some distance within each cookie because the baking soda will cause them to have volume.

Place your tray with the cookie dough balls in the oven and let them bake for 20 minutes. Take into consideration that depending in the thickness of your dough balls the more it will take to cook. Keep an eye on the oven and make sure they don't burn.
