Ingredients

500 g flour

25 g yeast

4 eggs

60 g softened butter

120 ml whole milk

120 ml water

10 g salt

75 g caster sugar

extra fine sugar

Method :

1. In a large bowl, combine the flour, salt and sugar
2. Dig a well, then pour in the fresh yeast dissolved in a little milk that you will have warmed beforehand.

3. Pour in the water, eggs and the rest of the milk.

4. Mix vigorously to incorporate the flour, using a wooden spatula.

5. When the dough begins to form a mass, work it with your hands so that it becomes homogeneous. Nothing prevents you from working it on a work surface if you find it easier.

6. Add the softened butter in pieces, incorporating well after each addition. You can add a little flour if the dough sticks a lot, but not too much anyway ...

7. Knead the dough until it becomes supple and smooth.

8. Form a ball and place it in a bowl. Cover with plastic wrap.

9. Leave the dough to rest for about 30 minutes at room temperature, degas it, then place the bowl in the refrigerator overnight.

10. The next day, degas the dough by pressing on it and roll it out on a lightly floured work surface, to a thickness of about 1 cm. Be careful not to press too much with your roller either because the dough must remain flexible and swollen.

11. Cut out circles in the dough using a cookie cutter or a glass about 6 cm in diameter.

12. Repeat until the dough is used up.

13. Place the dough rings on two baking sheets lined with parchment paper and cover them with a clean tea towel.

14. Let rise in a draft-proof place for about 30 minutes.

15. Heat the oil in your deep fryer to 190 ° C and test the temperature of the oil with a small piece of dough that should rise to the surface quickly, surrounded by small bubbles.

16. Dip the donuts in groups of 2 or 3 and cook for 1 min on each side. Take them out using a spider and place them on absorbent paper.
