Albuquerque Turkey Pizza

Recently, my girlfriend and I were challenged to a pizza duel. We put our minds together, put on our aprons, and set off to destroy the competition. It turned out to be a sort of Albuquerque Turkey style pizza.

This pizza is crisp and refreshing while maintaining the cheesy, gooey soul of a pizza. It's one of my favorite pizzas I've ever made.

Gathering Ingredients

To get your ingredients I would recommend making 2 trips. One to your local grocery store and the other to your local pizzeria. Most pizza places will sell you the dough and toppings to make your own pizza.

Grocery Store
-flour
-salt & pepper
-garlic powder
-lettuce
-cilantro (optional)
-1 or 2 limes
-1 can tomato paste
-1 can tomato sauce
-1 large tomato
-2 avocados
-1 bag of 'Mild Cheddar & Monterey Jack' cheese
-red chile (or other chile) powder
-(ranch)

Pizzeria
-1 medium dough ball
-4 oz. turkey
-4 oz. green chile
-ranch dressing

Put the tomato sauce and paste together in a sauce pan and warm it up. Add 1 tsp of the chile powder (turned out not too hot), a dash of garlic powder, and salt & pepper to taste. Add some water to keep the sauce from being too thick. It should be a little bit thicker than the consistency of spaghetti sauce.

Don't get the sauce on your clothes! It will stain! :(

Cover one of your oven racks with two sheets of tin foil, or whip out your pizza stones if you have them.

Put the first sheet of aluminum foil in the back and the second in the front. This way your pizza or peel will not catch on the aluminum foil.

Preheat the oven to 450 degrees F.

Working the Dough

To press out the dough, check out this instructable. Try not to overwork it or the dough will get very rubbery. 

After your dough is ready, flour up your pizza peel (the top of a pizza box works wonderfully), and put your dough on top. Now you're ready to put on the good stuff.

Toppings: Round 1

Scoop a ladle-full of sauce onto the middle of your pizza. Then with the back of the ladle, spread the sauce out in a spiral (see picture). Make sure the sauce goes all the way to the edge without touching the crust. Feel free to add more sauce if necessary.

Grab a large handful of cheese then separate it into your two hands. Sprinkle the cheese evenly starting around the edge and working your way into the middle. Fill in bald spots with cheese but don't over do it, we're not done yet!

Put the turkey on,  making sure to crumble/rip the turkey into smaller pieces as you do so. Then go ahead and put the green chile on, and top everything off with another layer of cheese.

When you're ready to put the pizza in the oven, give your pizza a quick shake to loosen it from the peel. Then slide it onto your oven rack using (ideally) one quick, smooth motion, but a couple quick shakes work well too.

Bake the pizza for about 10 minutes or until the crust is golden brown and the cheese is well melted.

While the pizza is baking, chop up the lettuce, tomato, and avocado into small squares. Try to keep the veggies fairly dry; nobody wants a soggy pizza!

After the pizza is done baking, let it cool for 5 minutes. Then add the lettuce, tomatoes, and the avocados on top.

Finally, squeeze half (or less) a lime's worth of juice onto the pizza and drizzle some ranch over the top.

Slice up the pizza and serve with a lime wedge and cilantro garnish. Drizzle a little extra ranch onto the plate and pizza to make it look extra fancy!
