Air Fryer Corn Ribs
Summer is here and that means it's time to enjoy our favorite summer foods. Corn on the cob is one of those foods that I always look forward to. While I love a good grilled corn on the cob, I like to experiment with it as well, just to see what different things we can do with such a summer staple!
These corn "ribs" don't taste like ribs, rather they get the name due to how you eat them. They're a little messy to make, but they're pretty tasty and a fun way to have corn on the cob.
Supplies
This is a fairly simple recipe that you can customize to your preferences. You'll need an air fryer, corn, a good sharp knife, butter and your favorite seasonings.
Shuck the Corn
The first step in this recipe is to shuck the corn. Make sure to pull off all the silk too!
Quarter the Corn
This next step can be tricky, corn cobs are hard to cut through. However, with a sharp knife and an abundance of caution, cut your corn into quarters. Start by cutting the top and bottom off the corn to make a nice flat spot to balance the corn cob. I found it easiest to stand the corn on end and cut from the top down, rocking the knife as I went. Cupping my hand at the top of the corn helped steady it. Cut one way, then cut the other way, trying to stay down the middle as much as possible. The goal is to have 4 quarters of the corn when you are done, but your cob might break as you go giving you little segments, that's ok! You can do this with the smaller bits if that is what you end up with.
Melt Butter
As with just about any good corn recipe, this one calls for melted butter. I was only doing 2 corn cobs so I melted about 3-4 tablespoons of butter in the microwave. Coat the corn pieces with the butter.
Add Seasonings
Next you can add whatever seasonings you want to your corn. I wanted to experiment so I did ranch powder, veggie seasoning and Tajin. Rub the seasonings in.
Air Fry and Enjoy!
Preheat your air fryer then I used the carrot setting on our air fryer to cook. The carrot setting sets the airfryer to cook for 10 minutes at 400 degrees F. Cook the corn until it starts to brown ever so slightly. No need to shake the corn as it cooks, but I would recommend checking on it after about 5 minutes to gauge how cooked it will get.
Once your corn is done cooking, enjoy! Eat this corn like you would ribs and only eat the corn part, the middle cob part isn't edible. This is a fun new way to enjoy corn and you can add whatever seasonings you like best. And you can use the air fryer instead of heating up the grill!
