Hi Everyone ! If you are a person looking for some traditional dessert in different flavours then congratulations !! you are in right place. In this Instructable I’m going to show you how to make a traditional Indian dessert in different flavours.

About Kozhukkattai: In Simple words Kozhukatta / Kozhukkattai is sibling to Dumpling, Modak, Momo, Mochi..., It is made from rice flour, with a filling of grated coconut, jaggery/sugar and then steamed. It is prepared as an offering on the occasion of Vinayaka Chathurthi. In Kerala, It is prepared on the Saturday prior to Palm Sunday and is also eaten as an evening snack with tea or coffee.

Kozhukattai Outer Cover:

  • 1 cup rice flour
  • 1.5 cup water
  • 1/4 teaspoon ghee or oil.
  • 1/4 teaspoon salt

For the kesari stuffing (Orange):

  • 1 cup semolina
  • 1/4 teaspoon cardamom
  • 3/4 cup sugar
  • 2.5 water
  • 2 pinches of natural kesari/saffron color (or use artificial food color)
  • 5 to 6 tablespoons of ghee

For the coconut stuffing (White):

  • 1.5 cup grated fresh coconut
  • 1 cup sugar
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon ghee or oil.

For the chocolate stuffing (Brown):

  • 1 cup grated fresh coconut
  • 1/2 cup chocolate health mix (health mix can give nutritional value. you can also use cocoa powder)
  • 1/4 cup of sugar

Equipments:

  • coconut grater
  • cooking pan
  • electric cooker
  • mixer grinder
  • mixing bowls

(A) Preparing Kesari Stuffing

  1. In a pan take 2.5 cups of water. Add 5 to 6 teaspoon ghee and place the pan on a stove top on a medium to high flame.
  2. When water turns boiling hot, add semolina gradually by consistently stirring. Make sure there are no lumps.
  3. Now add 3/4 cup of sugar and 1/4 spoon of cardamom (after powdering it using mixer grinder) and mix well.
  4. Add 3 teaspoons of food color (2 pinches in 3 teaspoons of water) and mix well.
  5. When there is no excess water in the pan, then cover and cook on a low flame for 2 to 3 minutes. This is to ensure semolina gets cooked completely and turns gooey.
  6. Keep stirring and cook until the mixture thickens and the moisture is evaporated.
  7. After it gets completely cooked, transfer kesari to another bowl. Leave it aside to cool down.

(B) Preparing Coconut Stuffing

  1. Mix 1.5 cup of grated coconut with 1 cup of sugar and 1/4 teaspoon of cardamom (after powdering it using mixer grinder).
  2. Leave it aside for stuffing.

(C) Preparing Chocolate Stuffing

  1. Mix 1 cup of grated coconut with 1/2 cup of chocolate health mix (or you can use cocoa poder) and 1/4 cup of sugar.
  2. Leave it aside for stuffing.

Preparing Rice Dough

  1. Take 1.5 cups of water in cooking pan. Add 1/4 teaspoon ghee or oil. place the pan on a stove top on a medium to high flame.
  2. Add 1/4 teaspoon salt.
  3. Let the water come to a rolling boil.
  4. Add boiling water to rice flour gradually
  5. Quickly begin to stir and mix all of the rice flour with water. leave it aside for sometime to cool a bit.
  6. Begin to knead it when dough is warm or slightly hot. Take care not to burn your fingers.
  7. Knead to a smooth and soft dough. Now allow the dough to rest for 10 minutes.

(A) Stuffing Kesari Flavoured ​kozhukattai

  1. Add a pinch of kesari to dough (per 2 kozhukattais) and knead it to obtain uniform color.
  2. This helps to identify their flavour after steaming them.
  3. Take the dough ball and gently flatten it with your fingers. Keep the edges thin if possible and the center slightly thick.
  4. Place the flattened dough on a plate or on a tray.
  5. Place the kesari stuffing in the center.
  6. Making small pleats, bring the sides in the center and then press and join them.
  7. Then gently roll the kozhukattai to get a neat round shape.

(B) Stuffing Coconut Flavoured ​Kozhukattai

Take rice dough ball (without adding any kesari for white kozhukattai) and repeat the previous step replacing kesari with coconut stuffing in the center. Gently roll the kozhukattai to get a neat round shape.

(C) Stuffing Chocolate Flavoured ​Kozhukattai

Add pinch of health mix/ cocoa powder to rice dough ball (per to 2 kuzhukattais) and knead them to obtain uniform color. This helps us to identify their flavour after steaming them.

Repeat the previous step replacing coconut with chocolate stuffing in the center. Gently roll the kozhukattai to get a neat round shape.

  1. Place the kozhukattai on steam rack
  2. Steam the kozhukattai using electric cooker for 15 minutes.
  3. After steaming, open the lid and carefully take out steam rack and serve them !!

Voila ! Kozhukattai Is Ready to Serve !
