The first thing you will need to do is buy your ingredients. The korma simmering sauce and frozen veggies are from Aldi's. The korma is in the condiments section and there is butter chicken and tikki masala sauce that are also delicious and easy to use.

This takes about an hour and a half from start to finish

Supplies

  • Firm tofu
  • Rice
  • frozen veggies
  • Cook House Simmer Sauce from Aldi
  • Clean Kitchen Towel

Prepping the Tofu

First thing to do is prep the tofu. Take the tofu block and wrap it in a clean kitchen towel. Place a cast iron or other heavy objects on the wrapped tofu block. Leave it for 20 mins.

This step is extremely important, tofu holds a lot of water that you want to remove the water to add flavor.

The next step will be to slice and marinade the tofu. You will want to slice it thin, about 1/4 inch thick. Place in a closing container with 3/4 cup simmering sauce. Leave for 20 mins.

Preheat Oven and Make Rice

Now is the time to preheat your oven to 400 and start your rice. I use a high convection option on the toasted because it will remove more moisture and make for crispier tofu. This will make 4-5 servings. So I would recommend 1/4 dry rice per person.

Toasting Tofu

Next, place your tofu on a glass or metal tray lined with parchment paper. Toast for 20 minutes and then flip and toast for another 20 mins.

Fry Tofu

You are almost done. Put a bit of oil in a cast iron or heavy pan, use a high smoke oil. Peanut, sesame or Avocado work well. You are just trying to make them look golden on all sides. This should take 2 minutes per side. Then place on paper towels to absorb any excess oil.

Adding Veggies

Once all your tofu is toasted, put your veggies in your cast iron and pour the rest of your sauce in the pan.
When I added the veggies I put a bunch of garlic in the mix. This is just a frozen veggie medley from Aldi, any sort of veggies will be good, bell peppers and onions, fresh veggies, or just about anything in your fridge.

Ready to Eat!

To plate: put your rice in the bowl first, lay your tofu on top and scoop your veggies over top.
