  • Preheat oven as per directions on your bacon of choice (we used 425 F)
  • While oven is heating, place the bacon on a baking tray
  • Cook bacon as per directions on packaging (we cooked for ~20 min for optimal crispness)
  • While bacon is cooking, move on to the next step

  • Grab the aoli ingredients and a small bowl to combine
  • Begin by adding 3/4 cups of mayo, juice from one lemon, and 1/2 tsp salt & pepper
  • Now mince the garlic and habanero using your method of choice (we used a garlic press for the garlic and a knife to mince the habanero)
    • Habanero can be left out if you are not a fan of spice
  • Add the minced garlic and habanero to the bowl and mix to combine
  • Place the aoli in the fridge to cool while you move to the next step

Preparing the Cheese and Avocado

  • Begin by slicing your avocado in half and removing the pit
  • Carefully slice the avocado in to slices lengthwise for optimal sandwich sized pieces
  • Now, use a spoon to remove slices from the avocado skin and onto a cutting board
  • Next, use a cheese grater to shred the cheddar into a small bowl

Toasting the Buns

  • By now, your bacon should be just about ready to remove from the oven; keep the oven at the same temperature for this step
  • Slice your onion buns in half
  • Place the buns cut side up onto a baking tray and bake ~5 min or until crispy on top

  • Begin with the bottom half of a toasted bun while they're still warm
  • Remove aoli from the fridge and spread ~1tbsp on the bottom bun to taste
  • Add shredded cheddar on top of the aoli
  • Layer 1/3 of the bacon on top of the cheese
  • Add ~3 slices of avocado followed by another layer of shredded cheese
  • Finally, spread aoli on the top half of the bun and enjoy! Easy as ABC!
