7-Layer Taco Dip

Years ago, one of my girlfriends was married to a chef who used to make this dip for all their parties.  They used to throw a lot of parties, too, so it was great!  Sadly, the marriage did not survive, but we still like to joke about how lucky she was to get custody of the 7-layer dip recipe!  It's so good!

INGREDIENTS:

1 can refried beans

1/2 packet of taco mix

2 ripe avocados, cubed

1/2 lime, juiced

1 small container of sour cream

1 jalapeno pepper, diced

1 onion, chopped

1 small can chopped green chilies

5 roma tomatoes, chopped

1 bar jalapeno jack cheese, grated

1 small can chopped black olives

Mix Refried Beans and Taco Seasoning, Then Spread in the Bottom of a Pie Plate.

Mash Avocado With Lime Juice, Then Spread on Top of Beans.

Spread Sour Cream Over Avocado.

Mix Chopped Jalapeno, Onion, Tomatoes and Green Chilies, Then Spread on Top of Sour Cream.

Spread Shredded Cheese Over Tomato Mixture.

Carefully Arrange Chopped Black Olives to Look Like a Jack-o-lantern Face.

That's all there is to it...just chill and serve with your favorite tortilla chips.  You can make it a day ahead, but wait to put the olives on, so the cheese doesn't get soggy.
