50’s Style, No-Bake Lemon Dessert

Ahhhh . . Childhood memories!

My mom was known for her Lemon dessert. Every time there was a potluck, someone coming over for dinner or a dessert needed to be made; my mom would make this light yet refreshing treat! There are only a couple ingredients but several steps. This dessert makes enough to fill a 8 x 11 pan.

Supplies

2 cups *Crushed Graham Wafers
1/2 cup Butter or Margarine
1/2 cup White Sugar
1 Box Lemon Jelly Powder
1 cup Hot Water
1/2 cup White Sugar - this is not a mistake or a double ingredient. It is for the second layer.
1 can (16 oz) Evaporated Milk-cold
4 TBSP Lemon Juice
1 TBSP Lemon Rind

* If you are unable to get Graham Wafers, any kind of biscuit will work as long as it is crushed. You can do this by rolling the biscuits in a tea towel and hitting them with a rolling pin; or using a blender works well too.

Small sauce pan
Spatula
1/2 cup measure
1 cup wet measure
1 TBSP measure
8 X 11 square pan
Kettle
2 x Medium size bowls
Large spoon
Hand held mixer
Grater

Let’s Make Some J-e-l-l-o!

1. Turn on your kettle and wait until it boils.
2. Using the medium size bowl
3. Pour the box of lemon jello powder and 1/2 cup of sugar into the bowl.
4. Using a spoon, stir until mixed well.
5.Once your kettle in hot, careful pour 1 cup of hot water into the bowl
6. Stir until the sugar is dissolved
7. Set aside in the fridge until partially set.

1. * Place the 1/2 cup of butter or margarine into the small saucepan.
2. Place the pot over medium heat
3. Once the butter is melted remove from heat.
4. Add 1/2 cup of white sugar to the melted butter and stir
5. Add the crushed graham wafers to the butter mixture. Stir
6. Taking 1/2 of the mixture and press it into the bottom of the 8X11 pan using a flat bottom of a glass.
7. Set aside

* You may want to melt the butter/ margarine in the microwave instead of the stove. I like to do it over the stove so I can control the heat and splatter.

Lemon Meets Milk

In my mom’s notes she writes “ the evaporated milk—- good and cold”

1. Pour your cold evaporated milk into a medium size bowl
2. Using your hand held mixer, whip for 2 minutes.
3. Add 4 TBSP of lemon juice and the lemon rind to the milk
4. Whip until blended.

Putting It All Together

1. Once your jelly is partially set, whip the whipped evaporate milk and jelly together.
2. Pour over the crumbs.
3. Put the remaining graham wafer mixture on-top.
4. Place in the fridge and let set for an hour.
5. Slice and enjoy with a hot beverage or take this delicious dessert to your next potluck.
