5 Minute Pitta Pizzas

This is a super quick lunch or snack food that tastes great. Its also technically a healthier version of pizza and tastes better in my opinion!

You will need:

  • Small pitta bread X6 (I used the Food Doctor gluten free pitta bread but any type would work just as well)
  • Peppers
  • Mushrooms
  • Cheddar cheese
  • Mozzarella cheese
  • Tomato puree

Prepare Your Toppings

The first thing you need to do is cut your mushrooms and peppers into thin slices and fry in a pan with some butter for around 5-8 minutes (until soft).

Pre-heat the grill, and smear some tomato puree onto the pita breads.

Arrange Cheddar Cheese and Toppings

Now, sprinkle some grated cheddar cheese on top of the pitta bread - you can make this layer as thick as you want but remember you will be adding mozzarella on top too!

Then spoon on your mushrooms and peppers ( you could always add more toppings if you wanted to jazz things up a bit more, but this is a great combination)

Then, put the pitta breads under the grill for 3-4 minutes until the cheese has melted nicely.

Add the Mozzarella

Now, the last step is to slice the mozzarella on top.

Once you've got the right amount on each, pop these back under the grill to melt slightly.
