5 Ingredient VEGAN Pastry Voodoo Dolls

This Halloween, shake things up a bit with these VEGAN Pastry Voodoo Dolls - not as sugary as the usual treats, but quite interesting, delicious and even healthy! No food colors or anything artificial here!

INGREDIENTS

FOR THE BEET FILLING

1 c raw beetroot, grated

1/3 c sugar (or other sweetening agents)

4 tbsp. coconut milk (or regular milk/water)

FOR THE VOODOO DOLLS

1 pkg of puff pastry (2 sheets) - I use Peperidge Farms

1 tbsp. Coconut Milk wash ( substitute with regular milk )

Ready Your Beets

Wash and peel the beet and grate them through the smallest side of your box grater (not the zester!). Measure 1 cup and set aside.

Make the Beet Filling - Step 1

Heat a small pan and add beets. Sauté until all the juices are cooked off. Then add the coconut milk. Cover and cook until soft.

Uncover, add sugar and keep stirring over medium heat until all the liquid cooks off and you get a fairy 'dry' mixture. Let cool completely.

Divide the Beetroot Filling

Divide the beetroot filling into 6 equal parts. You should be able to do this with a tablespoon measure.

Ready Your Template / Cookie Cutter

If you do not have a ginger bread man cookie cutter, here's a FREE printable!

I used the 3.5" template and got 6 (12 pieces) pastry dolls. Trace the template onto a clean piece of cardboard and cut it out using scissors.

Cut Out the Pastry Dolls

This is best done with partially thawed pastry sheets. If using a cookie cutter, you know what to do - hold and press down and remove the dolls.

If using the template - place the cardboard template over the pastry sheet and trace the outline with a small sharp knife.

Note: If the pastry sheet it too soft to pry the cut dolls out, refrigerate for about 5-10 minutes, and remove the cut-outs safely once firm.

Roll Out the Cut 'dolls'

Using a rolling pin (and a little flour to roll, if required), flatten the pastry sheets slightly, elongating them in the process.

Spread the Beet Filling

This is the messy part - you gotta smear the filling over half of your doll cut outs. Get your fingers in there - no point trying to civilize this step.

Bake!

Sandwich with the other half and pinch edges close. Cut out eyes, mouth and other gory details as you please. Transfer to a lined baking tray.

Brush tops with coconut milk (or regular milk / egg wash).

Bake in a preheated oven at 400°F/200°C for 15-20 minutes until golden brown, puffed and crisp.

Done!

Skewer the dolls with a bamboo skewer, to help them 'stand' up easily. Serve while still crisp. If it softens with storage, reheat in a 350°F/180°C for about 5 minutes and it'll crisp right back up!
