These rolls are quick and easy to throw together, and turn out amazingly! They rise quickly, are soft and fluffy, taste great with a bit of butter (and maybe some jam) and make an awesome side to any meal.

Enjoy!
Ingredients

Ingredients: (makes 12 rolls)
1 cup warm water
2 tablespoons yeast
⅓ cup avocado oil
¼ cup sugar
1 egg yolk
3 cups all-purpose flour
½ cup almond meal
½ teaspoon salt
Preparation

Preheat oven to 400 degrees. Grease a 9x13 baking dish.
Yeast

Mix together the warm water, yeast, oil, and sugar in a large bowl of a stand mixer. Let sit for 15 minutes to proof the yeast, and let it bubble upwards.
Dry Ingredients

Add 2 cups of flour, almond meal, egg yolk, and salt to the yeast mixture, and stir in with the hook attachment on the mixer.
Perfect the Dough

Add in the remaining 1 cup of flour into the mixer, gradually, while kneading on medium speed. Add until dough looks smooth, and doesn’t need anymore flour.
Separate Into Balls

Separate the dough into 12 smaller balls of dough. (And easy way to think about it: Break it into half, break each half into 2 parts, then break each piece into thirds.)
Bake

Place these balls of dough evenly on the greased 9x13 baking dish.
Bake in oven for 10+ minutes, or until the tops are completely golden brown.
Consume

Take out of oven and let cool before consuming.
