3-ingredient Salmon Patty
This recipe is easy, tasty, healthy, and gluten-free. Usually meat patty is made of several ingredients. Use of potato chips (sea salt and cracked black pepper flavor) reduces the number of ingredients to three, yet seasons the patty just right (at least for me, eating not too salty food is one of my healthy eating practices), binds the batter well, and makes it gluten-free in place of the usual binding ingredient-bread crumbs.
As far as making it, all you need to do is to chop, form balls and flatten them and fry. I make it two times every week for lunch on mornings I go out for errands. Upon return, definitely under 30 minutes, I have a satisfying lunch. Within 5 minutes, lunch is done and not much dishes to wash, won't be late putting my toddler to nap, won't be late to pick up my schooler...life is all good as a stay at home mom.
I don't have celiac disease or gluten intolerance. But I started to have headaches and most of times feel completely out of energy in late afternoons, seemingly more so on days I eat wheat lunch. Going gluten-free seems to do the trick for me for now. Thanks to potato chips coming to rescue.

Ingredients
5 ounce salmon, finely chopped
1/3 of a medium size sweet yellow onion, finely diced
1 cup potato chips (seat salt and cracked black pepper flavor), crushed
Serves: 1-2.
Steps
Step 1: Chop, dice, and crush the ingredients.
Step 2: Mix the ingredients and form six balls, let them sit for a few minutes to moisturizer the chips crumbs, heat up frying oil in a skillet on medium heat.
Step 3: Flatten the balls in your palm, place them in the skillet, fry a few minutes on each side or if you see red salmon on patty edges turn pink, meaning it's cooked through. My favorite frying equipment to use is this 5-in-1 griddler.
Enjoy! If you aren't restricted to 3-ingredients, feel free to lay a couple cilantro plants on the dish and plate the hot patty on the plants, or drizzle your favorite sauce to garnish and add layers of flavors.
