3 Ingredient Chocolate Bliss!!

What could be better than a luscious creamy chocolate bite of heavenly bliss that is super simple to make, looks decadently delicious and only uses 3 simple ingredients?
I guess if you are allergic to chocolate or just don't like it, there could be lots of things considered better. I happen to love chocolate, and I love things simple and easy. These truffles are a perfect simple treat that taste like they came from a high end chocolatier!
This is actually a "condensed" form of my go-to chocolate truffle recipe. I use it often when I need a quick chocolate treat to serve to friends and family.

Here's What You Need to Start-

1 1/2 cups Demi-sweet chocolate chips
1/2 heavy cream
Extract or liqueur of your choice

Prepare Chocolate for Melting

Using a sharp knife or chopper, cut the chocolate into small equal pieces. This will make melting the chocolate easier in the next step.
Place 1 cup of the chocolate into a heat safe bowl. (Because I live at high altitude where things cool rapidly, I use a metal bowl that can be placed over a pot of heated water in case the chocolate doesn't completely melt.)

Heat the heavy cream in the microwave or stove top just to a simmer. Pour it over the chocolate and allow it to sit for one to two minutes. This will melt the chocolate so when it is stirred it becomes a thick chocolate ganache.

Cool Your Ganache

Pour the melted chocolate mixture into a shallow bowl and place it in the refrigerator (or freezer if you are in a hurry to have these ready to eat). Overnight in the refrigerator seems to work best, but sometimes overnight just seems too long to wait.

Turn One Big Chocolate Ganache Into Balls

Now that the ganache is a firm chocolate It can be divided into squares or scooped out of the pan using a tea spoon or melon baller. Roll it in your hands to form a ball. Work as quickly as possible so the chocolate doesn't melt in your hands.
Return the balls to the refrigerator so they can firm up again.

Ready to Rock and Roll!

While the balls firm back up, melt the remaining chocolate chips in the microwave for 30 seconds on high. Stir, and repeat until the chocolate is melted and smooth.
Using a toothpick or fork, dip each ball into the chocolate and quickly roll it to cover in chocolate. Remove and place on foil or parchment paper to cool and set.

When the chocolate coating has cooled it is time to taste test your creation! Of course I have usually tasted some along the way (quality control is important in candy making).
These are also nice enough to box up and give to a chocolate loving friend as a gift!
