Flax "Bread"

Technically, this shouldn't be called "bread", since it doesn't have any wheat. I had some flax laying around, so I decided to make a flax-based bread... Why not make it all flax?

Supplies

Ingredients:

  1. 1/4 cup flaxseed meal (30g)
  2. 1 large egg
  3. 1/4 tsp baking soda
  4. 1 1/2 tsp rice wine vinegar or apple cider vinegar
  5. 1 Tbsp Water
  6. Oil, to grease

Equipment:

  1. Food scale (optional)
  2. Measuring spoons
  3. Bowl(s)
  4. Fork

Mix!

Combine 1/4 cup or 30g of flax meal, 1/4 tsp of baking soda and 1 large egg in a bowl. Mix thoroughly with a fork.

Grease Container

Lightly grease the container you're using to cook this. (I used MCT oil for this) If you have cooking spray, I think that will work well. For those of us that don't have that, just wipe the container with a paper towel. By the way, make sure the container you're using is microwave safe.

Add in Vinegar

After greasing your container, mix 1 1/2 tsp of rice wine or apple cider vinegar (and the water) into the batter. Mix thoroughly.

Pour and Microwave!

Quickly pour the batter into the greased container and microwave for two minutes. Times may vary between microwaves, so check on yours until you find your microwave's sweet spot. A toothpick should come out clean. Once done, transfer to a wire rack to cool.

Cool, Cut and Chomp

Now, for the hard part: letting it cool. Technically you can cut and eat it as-is, but it's pretty hot so I like to let it cool for a bit. Whichever way you choose, enjoy!
