2 Ingredient Ice Cream (Banana & Peanut Butter)
Hey y'all! Today I wanted to show you how to make a simple peanut butter banana ice cream, this is a healthy version that doesn't have any dairy in it or extra sugar. It only requires two ingredients and optional vegan chocolate chips with coconut flakes on top for added texture and flavor. You don't have to add these toppings if you don't like them, just add what you like. Ingredients
- 4 medium Bananas (peeled, halved and frozen)
- ½ Cup Peanut Butter
- Sprinkle of Coconut Flakes (optional)
- Sprinkle of Vegan Chocolate Chips (optional)
Tools
- Food Processor
- Mixing Bowl
- Spatula
- misc. kitchen utensils
Add Banana and Peanut Butter to Food Processor
In a food processor, add in the frozen bananas and peanut butter.. Instead of throwing away my overly ripe bananas, I usually chop them in half and store them in the freezer. This is a nifty little trick because you can always pull them out and whip up some banana Ice cream or banana bread!
Pulse Until Smooth
Pulse until smooth (you might need to stop and scrape the sides occasional). I had to scrape the sides about 2-3 times to help out because the combination of the peanut butter and bananas makes a thick custard like consistency which might not be the easiest to blend without a little help.
Add to Serving Bowl
Once it is smooth, add to serving bowl. Garnish it with a sprinkle of coconut flakes and chocolate chips.
