Supplies
2 medium apples
¾ cup (100 g) all-purpose flour
¼ cup + 1 tbsp (60 g) sugar
½ tsp (2.5 g) baking powder
2 large eggs
½ tsp ground cinnamon
Prepare the Apples
Peel the apples. Cut them into small pieces. Drizzle the apples with a little lemon juice so they don’t turn brown.
Your filling is ready!
Make the Batter
Mix the eggs and sugar in a bowl. Whip with a mixer: start on medium speed, then switch to high. Beat until the mixture becomes thick, pale, and fluffy.
Add the Dry Ingredients
Sift the flour directly into the egg mixture. Add the baking powder and cinnamon. Gently fold with a spatula. Add the apples and fold them in carefully.
Bake
Pour the batter into a baking dish. Bake at 180°C (350°F) for about 20-30 minutes. The cake should be soft, golden, and springy to the touch.
Enjoy!
Let it cool slightly, slice, and enjoy the incredibly soft texture. Perfect with tea, coffee, or for a simple cozy dessert anytime.
